Protein Cookie Dough Cheesecake Bars

Ingredients: Cookie Dough
  • 3/4 cup drained and rinsed chickpeas
  • 1/4 cup peanut butter
  • 1 1/2 tsp. vanilla extract
  • 40g vanilla protein powder
  • 1/2 cup baking stevia
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt 
  • 3 tbsp. chocolate chips

Ingredients: Cheesecake

  • 6 oz. fat free cream cheese
  • 2 oz. nonfat plain Greek yogurt
  • 60g vanilla protein powder
  • 1/2 cup baking stevia 
  • 1/2 tsp. vanilla extract
Instructions
  1. Drain and rinse beans
  2. Blend beans with nut butter and flavor extracts until smooth.
  3. Add protein powder, sweeteners, baking soda, and salt; blend again until combined.
  4. Empty cookie dough into a 7"x5" or 8"x6" dish lightly coated with cooking spray.
  5. Clean blender, then add cream cheese and Greek yogurt, blending until smooth.
  6. Add protein powder, sweetener, and vanilla extract; blend again until no clumps remain.
  7. Spoon cheesecake mixture over cookie dough and place in the freezer for 2-3 hours until firm.
  8. Cut into eight pieces and serve chilled. Enjoy!
